Why do you ship only in California?
As a small home-based roaster, my permit restricts sales to within the state of California. As the roaster grows, the operations will be moved to a commercial space which would allow for nationwide sales.
How long should I rest my beans?
Recommended minimum rest time:

Light Roast: 5 days

Medium Roast: 3 days
Each order is roasted after it is placed. This means that, depending on where you live, the beans might arrive super fresh. If you don't allow the beans to degas before brewing, you might taste a smokiness that is a product of the roast and not from the beans themselves. The roasting process traps a lot of CO2 in the coffee beans, and ideally, they should be given some time to degas before brewing.
How do you choose your beans?
My goal is to have different flavor profiles of beans to cater to different preferences. I typically feature these distinct flavor profiles: delicate and bright, classic and comforting, and unique that's different from typical coffee flavors.
I am constantly sampling and cupping new beans to find the roast profile that best highlights their natural flavors. From there, I brew and enjoy them over several days as both espresso and pourover. If a coffee consistently stands out after repeated tastings, it earns a spot in our offering."
How do you make your coffee at home?
My baseline recipes:
- Espresso: 18g of coffee to 45~54g of water (1:2.5 ~ 1:3 ratio)
- Pourover: 20g of coffee to 320g of water (1:16 ratio) at 200F.
- Bloom: 60g of water for 45sec bloom
- First Pour: 140g of water pour from center spiraling outward, then back in twice.
- 2nd Pour: 120g of water pour from center spiraling outward, then back in once, and finish with slow and gentle pour in the center.
